What makes knowledge distinct from mere opinion

Problem

The Sophists and Descartes both explored arguments for Epistemological Skepticism. Whereas the Sophists move from skepticism over ability to know to the claim that knowledge is relative, Descartes moves from the doubt over our senses to arrive at the claim that knowleldge does exist. What, according to Descartes, makes knowledge distinct from mere opinion and what would Descartes say to the Sophists claim that everything is relative?
