Oils and Fats are hydrophobic molecules, that is, they are non polar and insoluble in water. Lipids in common are molecules with a big non-polar extension and therefore they are soluble in non polar solvents, such as ether, benzene and chloroform. There are certain amphipathic lipids, that is, lipids whose molecules encompass a hydrophilic portion, such as the phospholipids, giving them the property of being dragged by the water, and a hydrophobic part (that is, non polar).
