The client Paitong Thai Cuisine is owned and operated by Nancy Samvong since 2006in Portland, Oregon. The client grew up in Laos and Thailand and immigrated to the US at age 17. The inspiration for the restaurant centers around the client's passion for making healthy and delicious food from her culture.

1. Nancy is working on a new website with Liz from the Psu Business Outreach Program (BOP)

2. Nancy has recently updated her menu for the restaurant and we have a copy of that updated menu.

3. She is very happy with her lease terms for the restaurant space because it is well under market value.

4. Nancy works all seven days a week cooking and serving the food and drinks, her daughter helps few days of the week, she has had people interning from IRCO to help with the restaurant, sometimes she gets people from DHS work program and pays 20% to them, and she has a homeless man that helps in the kitchen in exchange for food.

5. She is working with Postmates for delivery service and wants to limit her menu to the simple dishes for Postmates delivery. We noticed that she does not have a menu that displays on Postmates so we need to look into why and give updated items to offer. She would like to work with GrubHub for delivery as well.

6. Ideally, she would only like to be open for lunch M-F since lunch has a simpler menu and takes less staff so she can easily run it herself. She would like to only offer Dinner on busier nights like Fri/Sat and be closed Sundays.

7. She sells her peanut sauce at Farmers Market on Sunday's and is studying to take a test with the FDA so she can package and sell her sauces in supermarkets.

8. We need to help research the neighborhood demographics and urban plans for that area to determine what type of demand and growth this area has.

9. The restaurant could benefit from some added display cases up front to hold beverages and the peanut sauce she sells.

10. Nancy expressed wanting to focus more on making the restaurant more of a takeout business to reduce the need for staff and focus on developing food products to bring to market.

11. She also feels her lack of technical skills is something that is hindering her success. She will need someone to her learn to manage online channels.

12. She has sent out mailers and distributed coupons in the past but had very little success. She is interested in using her social media and website for promotional purposes.

13. She would like to not have catering and cooking classes listed as services she provides since they have brought in no revenue in a few years.

14. Nancy really wants to understand the missing piece that will make her business successful.
