You have been hired to organize a semi-formal dinner for the closing reception of a conference on the topic of Saving our Oceans held at the Vancouver Aquarium. 50 professionals from the conference will be in attendance. The title of the event is 'Swimming Forward to Cleaner Waters'. Guests will be dining in the actual aquarium with fish tanks full of colourful marine life setting a dramatic and engaging backdrop to the tables.

1. 1-3 pages write up describing the visual details of how you will decorate each table and present the food, plus the sustainable rationale for all your décor and menu choices.

2. The Décor- you have access to round tables and chairs for 50 people. Each table will need to be decorated elegantly with a centrepiece, and a 'place setting' to accommodate the menu you have created.

3. The Menu- make a sustainable 3-course prix fixe menu with 2-3 choices for guests within each course. Remember to think about accommodating different dietary needs within those choices and sustainability

4. The Cocktail- Create a signature cocktail for the event (with a unique name) that reflects the theme of the event and the design and décor for each table. Add this item to the menu as well.
