Why do not nebraska iowa and oklahoma

New York state is one of the largest states in the nation, but most of it comprises farmland. New York state is the 3rd largest dairy producer in the nation and competes for the top spots in Apple production and wine production in the nation as well. Why do you suppose that NYS farmers grow so many apples, grapes, and produce so much dairy? Why don't Nebraska, Iowa, and Oklahoma (all part of the Farm Belt and great growers of corn, wheat, and other grains) do this instead?
