What would be the best legal argument for you

Problem

Suppose I make every student sign an arbitration contract prior to taking a course with me. The arbitration agreement prohibits students from suing me because arbitration will be used and, in any arbitration, the most that can be awarded to students for any wrongful act I may commit is $500 dollars. Students may pick the arbitrator for any arbitration against me, but the names of the possible arbitrators are from a list I created.

Now suppose that during the semester I do something against you that you would like to sue me for. From what I've described, what would be the best legal argument for you to get out of the arbitration clause you signed?
