Conceptualize and design a dessert, pastry, or bakery item that is related to some of the ingredients we have studied in the last 13 weeks.
Be creative and try to enhance the sensory properties of the ingredients you've selected by using techniques you've learned can influence the sensory properties to demonstrate what you have learned in this course.
Discuss the sensory properties
How is it visually appealing, and what have you done it its preparation or presentation to elevate this?
Aroma - does it have a pleasing aroma? What steps did you make to elevate this?
Taste - describe the taste, focusing on what we have talked about in this course. Is it sweet? Is it sour? Do you have many flavours creating a balanced dish or is it one sided? What have you done to combine flavours that go well together? How is this creative? What have you done to boost flavours - toasting nuts, etc.?
Texture - Variety of textures? Temperatures? Soft, crunchy, creamy, brittle, hot, cold. What efforts have you made to ensure there is a variety of textures
Your assignment should include:
1) A short description of the product and include a picture if possible (can be a drawing/sketch, a sourced photo that is similar (does not have to be identical, just to show your vision of the dish/product).
2) A written component discussing the goals set above. Describe the dish, where you came up with the idea. Why you chose these ingredients. Discuss the steps you took to elevate the sensory properties. Discuss the sensory aspects of the ingredients and what they bring to the dish.
3) A recipe (you do not have to make it, just write it, so it does not have to be perfect)
4) Describe why you think this dish, product, or pastry would be a successful dish you serve in your shop.
5) Research and apply creativity and techniques based on the following:
a) Style of selected chef
b) Seasonality.
