sucrose or table sugar can react with water to

Sucrose, or table sugar, can react with water to produce two other compounds, glucose and fructose.

Though, when you add sugar to a glass of water, this reaction proceeds extremely slowly.

Why does it proceed slowly, and what else is required to speed up the reaction?

The reaction proceeds slowly because the activation energy is high. An enzyme or other catalyst is required to lower the activation energy and speed up the reaction.
