Q. Explain Emulsion stability?
The stability of an emulsion is determined by the viscosity of the continuous phase, presence of an emulsifier, the concentration of the emulsifier, size of the droplets and the ratio of the dispersed phase to the continuous phase. Interfaces in emulsions and foams can be stabilized by:
• small molecule surfactants,
• adsorbed macromolecules - often proteins, and
• fat globule networks.
We have studied above that the stability of an emulsion is influenced by emulsifiers.
