The word pectin is derived from a Greek word which means to "congeal or solidify". Pectin is an acidic structural polysaccharide, found in fruit and vegetables and mainly prepared from 'waste' citrus peel and apple pomace (skin). Pectin is present as a structural polysaccharide in the middle lamella and primary cell wall of higher plants.
