1. Identify the most relevant food chain (sub)category and normative documents for LRL in accordance with FSSC 22000 Scheme Version 5.1.
2. In the production process, there was a packaging machine automatically transfer produced moon cakes from a conveyor to plastic trays and then sealed in plastic bags. Discuss in detail what sort of evidences about the machine you would collect to confirm that LRL was fulfilling the requirements in the prerequisite programme technical specification that you identified in Part 1). In your essay, you should (a) Name and explain each of the evidences you will collect; and (b) quote the corresponding clauses with clause numbers for each of the evidences.
