Using new genetic editing tools, you decide to do some protein engineering. You are working on an enzyme (X) that breaks a bond in the sucrose molecule, allowing you to further convert it into an artificial sweetener later on. However, there are several problems with this enzyme.
• First, you need to modify X so that it is more soluble in water.. Assume that you know the DNA sequence, the protein sequence, and the 3D structure of the enzyme, and you can change the protein however you want by modifying the DNA. The protein has a repeating sequence that goes: Ala-Leu-Leu-Gly-Thr. You decide this would be a good place to modify the enzyme. How would you change the amino acid sequence to make the protein more soluble in water without disrupting the overall structure too much? Explain your answer.
