Problem
To make chicken salads, Jake removes vegetables from the cooler to prep them. He also needs to be sliced, cooked chicken to go in the salads. Not finding the chicken in the cooler, Jake looks around the kitchen and finds a pan of sliced chicken on the lower shelf of a prep table. He adds the chicken to the salads, stores the salads in the cooler, and leaves work. The salads are served at lunchtime. After lunch, the manager comes into the prep area and begins looking for a pan of chicken she had left on the lower shelf of the prep table. She had set the chicken aside to discard it because it was time-temperature abused. In one to two sentences, explain the problem with Jake using the chicken in the salads.
