Explain about Fats and oils
Fats and oils are a unique class of agricultural products in that a high degree of interchangeability among them is possible for many products and uses. Additional processing and/or blending of one or more source oils may be necessary for a satisfactory substitution. Knowledge of the physical and chemical properties of each individual raw material is necessary to successfully duplicate or improve on the functionality of the original source oil's functionality.
