Essay:
In the 17th century Rene Descartes wrote an autobiographical treatise called Discourse on the Method, which elaborated on his thinking about all kinds of topics from science, medicine, God and the human soul, and morality.
In the 20th century, in an NPR series and book by the same name, This I Believe:The Personal Philosophies of Remarkable Men and Women, famous and not-so-famous people wrote about their beliefs on things like the definition of happiness, what happens when we die, empathy, creativity, spirituality, and politics. (Wonder and imagining never goes out of fashion.)
Create an essay (1 to 2 pages) on your own philosophy of life, your own This I Believe, explaining your thinking on a particular topic of your choice. Use anecdotes from your life, if appropriate. Explain how you came to this belief and who and what influenced you. Start with "I believe..."
