Length: 3 to 4 pages.

Materials:

1) One minute video clip of Alyssa Milano speaking on food safety.

2) Partnership for Food Safety Education's website.

3) Centers for Disease Control and Prevention_Food Safety.

Steps:

Step I: Watch YouTube video: "Alyssa Milano on Food Safety"

Step II: Access information related to safe food handling at FightBac.org and the CDC. Although students may browse the entire site, they should focus the majority of their time reading the sections entitled, "Clean," "Separate," "Cook," and "Chill."

Step III: Students will research a recent outbreak of foodborne illness in the news and write a written report. Although students may include additional information, the following information is required:

1) News source

2) Date of news report

3) Number of individuals affected

4) Food source

5) Microorganism causing the illness

6) Symptoms of illness

7) How could this foodborne illness have been prevented?

Step IV: Within the written report, students should also address these points:

1) Define foodborne illness in your own words

2) Identify a favorite food that would be classified as a potentially hazardous food

3) Give examples of cross-contamination of food

4) Provide at least one recommendation from each of the 4 core practices (e.g. prior to cooking, store chicken in refrigerator at 40 F or lower).

At the conclusion of this homework, students will be able to:

1) Describe the scope of foodborne illness in the United States

2) Describe four core food handling practices to reduce the risk of foodborne illness

3) Identify foods most likely to be associated with foodborne illness

Format your homework according to the following formatting requirements:

(1) The answer should be typed, double spaced, using Times New Roman font (size 12), with one-inch margins on all sides.

(2) The response also includes a cover page containing the title of the homework, the student's name, the course title, and the date. The cover page is not included in the required page length.
