A protein engineering laboratory studying monoclonal antibody protein characterized the thermal stability of these proteins by measuring their melting temperature (Tm), which is specific as the temperature at which the proteins are half unfolded. The investigators found that there were a positive correlation between Tm as well as the proteins -SH molar ratio. In other words, proteins with a higher content of (sh) we're more thermally stable.
