Assignment task: Pick an ethnic group you want to cover in the United States: African American/Black, Latino/American, Asian American Pacific Islander (AAPI)
I. Conduct an in-depth study of your chosen ethnic group, include their:
- historical, social, political, and economic struggles
- racial and social justice
- solidarity, and liberation
- their relevance to policies to promote anti-racism and support cultural sensitivity and competency that address health disparities
II. Critically evaluate the steps taken by and policies of the Federal/State and community nutrition programs to reduce racial disparities, socio-economic inequities and ensure accessible, culturally safe programs and services to improve the health outcomes in your ethnic group of study.
III. Explore how Ethnic Groups have implemented self-governed policies and interventions for healthy communities. Identify the gaps in community nutrition and healthcare policies that could be addressed to reduce racial disparities and health inequities.
IV. Finally, include a page minimum (about 250 words) and, a maximum of 2-page opinion piece; what are your thoughts on your research, and what can you personally do, or personally see, to help move initiatives forward that will make a positive difference in the lives of the American ethnicity you investigated. Include why you chose this group to study instead of another.
