What is the meaning of saturation or unsaturation of fats and oils?

Whenever it is said that a triglyceride is saturated this means that in its molecule the carbon chain is bound in its highest capacity to hydrogen, that is, there are no double or triple bonds among carbons. Such saturated molecules are usually solid fats at common temperature. Unsaturated triglyceride molecules are such in which there are double or triple bonds among carbons and therefore they do not accomplish their highest capacity of hydrogenation. Such unsaturated molecules in common are oils, liquid at normal temperature.
The words saturated or unsaturated refer them to the saturation of carbonic chain by hydrogen atoms.
