Digestion of Carbohydrate starts with the action of salivary amylase or ptyalin, in the mouth and it continues in duodenum through the action of pancreatic juice. This juice consists of enzyme named as “pancreatic amylase”, or “amylopsin”,  which breaks starch into the maltose, a disaccharide made up  of two glucose molecules.
