Synopsis:

Research and develop a themed party for an out of town client. This is a high roller party with VIP guests.You are responsible for the menu design, set-up, and any rentals you may be need. Below are required items:

1. Written request for proposal to send to the client.This is an outline for the whole party including:

a. Describe the theme, style of service, and all items you can think of to keep the guest happy.
b. Types of food that will be offered
c. Beverage that will be offered
d. Equipment needed (cooking,serving etc.)
e. Type of entertainment
f. Deposit and guarantee information

2. Menu 6 course minimum, with 3 choices for entree (presented to guests, no prices)

3. Cost Analysis of 2 entree items (assume 30% food and 20% beverage cost)

4. Layout of: Front and Back of the house with all items labeled

5. Labor schedule with cost (FOH @ 20.00/h, BOH @ 15/h)

6. Service style

7. Plate drawings for 2 entrees

8. P&L Statement (estimate using 30% food cost,don't forget taxes)

9. How will guests arrive/park, be greeted and seated
Other I nformation:

1. Students can work by themselves or in groups of 2,groups of 3 must have my permission. Project must be typed according to the syllabus guidelines.

2. The party is for 250 people, sit down, budget is $250.00 per person

3. This is an outdoor party and the location has enough space for any arrangements.

4. Client would like a cocktail party before the event.

5. All papers will be graded according to the Lynn University writing rubric,spelling will be included.

6. Projects will be presented duringthe last week of the semester and on final exam day.

a. Presenting groups are to prepare a 10-15-minute PowerPoint presentation on the pertinent information. Each participant must have equal speaking time. Each slide should have at least 5 bullet points and photos are encouraged.
b. Students are encouraged to incorporate different media and/or materials to enhance the presentation,and/or some activities to engage with the rest of the class.
c. You may also include handouts or outlines,but copies must be made for each student in the class. Students are reminded to dress for success.

On the Due Date:

Students will subm it their paper through live text - turn-it-in. Make sure you turn your paper in on time.

Day of presentation:

1. Cover page with course number,title of the presentat ion, and your group members' names.

2. A copy of your PowerPoint,6 slides per page.

3. Any other supplemental materials.

How will groups be evaluated:

• At the end of each presentation, the class will evaluate the presenting group. This counts 20% of the entire grade for the project.

• The professor holds the remaining 80% of the assessment : 40% from the presentation and 40% from the written paper

• As a respect to the entire class, your presence and evaluation of the class is required. Any student absent will receive a grade of zero for the final exam,and a 10-point deduction will be assessed for each of the presentation/evaluation you are missing.
