In 2007, Ed McFarland, the sous-chef at Pearl for six years, opened his own restaurant nearby-copying, according to Charles, "each and every element" of Pearl Oyster Bar, including the white marble bar, the gray paint, the chairs and bar stools, the packets of oyster crackers, and the dressing on the Caesar salad.
